Swords and armor in Europe were made in a factory like setting, not by one person alone doing all jobs.
Each person had a particular job/responsibilty. One person ground blades. One made hits. One pommels, one grips, and one put it all together.
The person who made the blade had that as their sole responsibility and they kept the process they used to temper the blade a secret. They didn't fully understand the process steel undergoes when tempered but had routines developed to repeat earlier successes. It's understandable why their secret was so guarded. Whomever had the best blades got the most work.
